This is a very flavorful sandwich that is light and filling at the same time. It's great to make right now with the fantastic tomatoes that you will find in your garden or at your local farmer's market.
- 1 Tbsp. Olive oil
- 1/4 cup Yellow onion (diced or ring)
- 1/4 Cubanelle Pepper
- 1 Tbsp. Rubarama No. 4
- 2 Tbsp. of Boursin Cheese
- 4 slices tomato
- Cheddar cheese
- Brioche bun
- 1 egg
Slowly sauté the pepper and onion in the olive oil and dash on some Rubarama No. 4. Toast brioche bun and add a thin layer of Boursin. (Note: it can be easier to put a glob of the Boursin on the bun and then set it in your warm oven for 30 seconds and then spread it.) Sprinkle some Rubarama over the Boursin.
Layer the cheddar, tomato slices, and onion/pepper combo onto the brioche and then, on low heat, place the sandwich on your sauté pan. Cover with a cheese melting dome or sandwich/burger dome. You can always press the sandwich is well.
Optional, add a poached egg with a soft yolk. Don't know how to poach an egg? I suggest you learn as it's the most magical way to eat an egg in my humble opinion. If you add the egg, you might want to eat this will a fork and knife because it's going to get messy. Not that that is a bad thing.
