This has become a favorite in the test kitchen. It's also what we like to call "Almost Paleo" because of the small amount of sugar in the No. 4.
- 2 pounds ground chicken
- 5 green onions, chopped
- 1/2 cup Texas Pete or Frank's Red hot sauce
- 3 eggs
- 1 teaspoon Rubarama No. 4
- 2/3 cup almond flour
Get your favorite rimmed baking sheet and small cookie scooper at the ready and preheat oven to 400º F. Mix together the ground chicken, green onions, hot sauce, eggs, Rubarama, and almond flour into a large bowl. We use a pastry cutter to cut together the mixture well.
Now, make small balls of the mixture using the cookie scooper or ice cream scoop and place the rounded goodness on the baking sheet. Place in the oven for 20 minutes.
Remove to serving plate, drizzle with hot sauce, garnish with more green onions, and sprinkle with Rubarama. Makes about 40 balls.
What we used: Rubarama No. 4, Texas Pete Hot Sauce, Rimmed Half Sheet, and the OXO Cookie Scoop that we use for our smaller balls.
