I love spinach. It borders on obsession. This recipe takes it to stalker level 5. You can do all of this by hand, but if you are pressed for time, or just don't like chopping, fire up that food processor.
- 2 tablespoons butter, unsalted
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 2 bunches spinach, stemmed and finely chopped
- 1/4 cup heavy cream
- 1/4 teaspoon sea salt
- 1 teaspoon Jack's Blend Rubarama
In a large pot over medium heat, melt the butter. Add onion and cook until soft, approximately 2-3 minutes. Stir in garlic and cook for a minute. Add the chopped spinach, cook one more minute. Add the cream, salt, and Rubarama, stir well and cook for 4 minutes. Serve warm.
Because Rubarama doesn't contain a lot of salt, you might want to add a bit more to taste.
Prep time: 6 minutes by hand; 2 minutes with processor
Cook time: 8-10 minutes (3 minutes active)
