This is a quick and easy lunch.
- 2 slices of fresh bread, Italian is best
- 1 medium tomato, slices
- 2 tablespoons Goat Cheese Spread
- 1 tablespoon Marie-Odile's Vinaigrette
- 8-10 fresh basil leaves
Smear the goat cheese spread on each slice of bread. On one slice of the bread layer the tomato basil, alternating until you reach the top. Drizzle with the vinaigrette and place the other slice of bread on top. Now, go eat!
Tip: it's best to let the Goat Cheese Spread and Marie-Odile's Vinaigrette sit at room temperature for about 10 minutes beforehand as it gives both a better consistency to build the sandwich.
