This is a weird one. Or so we thought, and then found out that there are a lot of you out there who have this same issue: you love chicken noodle soup, but don't want any chicken in the soup itself.
So this is our No-Chicken Noodle Soup.
- 1 cup carrots, sliced
- 1 cup celery
- 6 cups broth, chicken
- 8 ounces of wide egg noodles
- 1 teaspoon Rubarama No. 4
- Fresh parsley
Bring broth, vegetables, and Rubarama to a boil, add noodles, reduce heat to simmer and cook just shy of the pasta's required cooking time. Garnish with parsley and serve.
This can be easily made vegetarian with a broth change. Just as delicious.
