You can make one or many of these, great for food prep. This recipe is for one and it's so easy.
- 1 green pepper
- 1/4 pound ground beef
- 1/4 cup onion, diced
- 1/4 cup tomato, diced
- 1/2 teaspoon The Original Rubarama
- Dash of sea salt
- Queso cheese (optional)
Cut off the top of the pepper, dice the top and put aside. Clean out the bottom of the pepper.
Preheat oven to 350ºF. In a skillet over low heat, cook beef, onion, tomato, and diced green pepper until beef is cooked though.
Stuff mixture into pepper bottom and set pepper into oven safe dish. Optionally, top with queso. Cook for 20-25 minutes in preheated oven.
Serve right away or cover and refrigerate for up to 2 days.
